Anchovies and Little Fish: Part 1 - Reminiscing about cooking in Sicily, 3 different kinds of Anhovies and 1 Little Fish. The little fish is called Triglia, or in English, Striped Red Mullet.

We must mention the Olive Oil and how great the importance is to every dish in Sicily. Here in Sicily there are 6 designated areas of different kinds of Olive Oil. They are called DOP areas (Denominazione d' Origine Protetta) which translates in English to "Protected Designation of Origin". The Olive Oil we use is from the Mount Etna DOP, from the Pioppi and Betulle farm and it's name sake is the same: Olio Extravergine di Oliva Pioppi e Betulle
