Pasta Scampi & Mushrooms - Cooking with Loredana - Living The Life in Sicily - E44 - Part III

Join us for this episode in which we're cooking Sicilian Pasta & Scampi with Orazio and Loredana at our black lava stone cottage in Sicily Italy. This is Part III of a 3 part series where we are cooking the antipasti (appetizers) and the Primi Piatti (First course).
In Italy, the Antipasti (Appetizer) is served first and then comes the Primi Piatti (first course). After that is served a meat or protein plate, and then finally the Dolce (dessert or fruit). Finally the coffee (we call it espresso) is served. Option is to have it served with a liquor like sambuca or Jack Daniel's Whiskey, just a tiny pour to top off a very small espresso. They call it Cafe Correcto.
Today features mushrooms for the Antipasti (Appetizer) with bread (pane) and Pasta with Scampis for the Primi Piatti (First Course). We started the recipe for the Pasta with Scampi's the day before which you will see in Video - Episode 43 Part II, with the preparation of the tomatoes. ANITPASTO (APPETIZER): MUSHROOMS
Note: Antipasto means one appetizer/Antipasti means more than one appetizer
Ingedients:
Cultivated or Wild Mushrooms - for this recipe we used cultivated mushrooms
Olive Oil
Dried Red Pepper Flakes or chopped Fresh Red Pepper
Salt and Black Pepper
Saute Olive Oil, parsley, garlic, and red pepper. Cut the hard ends of the stems of the mushrooms, wash and dry. Put the mushrooms into the sauce pan with the heated olive oil, cover. Let saute on low heat until the liquid that comes off of the mushrooms is evaporated. At the end, add salt and pepper. Serve with bread (Pane). This sauce also makes a very good base for risotto.
PRIMI PIATTI (FIRST PLATE OR COURSE): PASTA WITH SCAMPI'S IN TOMATO SAUCE
Ingredients:
Fresh Scampi's in season
Olive Oil
Garlic
Chopped Fresh Parsley
Cherry Tomatoes cut in half
Pasta - we used spaghetti
Description:
To make the Tomato Sauce, saute olive oil with garlic and parsley for a few minutes. Then add the halved Cherry Tomatoes and saute for a few more minutes., Then add the Scampi's and saute for another 5 minutes, stirring. Boil the water with plenty of salt. Cook the Pasta according to the directions or approximately 8 - 9 minutes until el dente in texture. Do not over cook. We prefer it a little el dente, not soft. Add 2 scoops of the pasta water to the tomato sauce mixture and continue sauteing. Orazio says you can do a variation of this by adding a cup of white wine instead of the pasta water. Add the pasta to the tomato sauce and mix well. Plate.
